Season
early summer delivered some tricky conditions with hail severely damaging emerging crops in several areas throughout the Riverland. The canopy therefore required careful management to ensure the crop level was balanced, allowing for decent ripening whilst retaining natural acidity. Late summer seemed endless and very mild so the fruit was in no hurry to ripen allowing for gradual concentration of flavours.
Winemaking
picked early in the morning, the grapes had a little skin contact before pressing on arrival at the winery. We took clear juice for fermentation allowing the fruit to shine through, with a short stint on lees in stainless to enhance mouthfeel before transition to bottle.
